Bacon Ranch Potato Salad

INGREDIENTS

5lb. Potatoes
1c Mayonnaise
1c Sour Cream
1pkg Dry Ranch
8 slices Bacon (at least), cooked until crispy and chopped
6 Scallions, diced
1c Cheddar Cheese, shredded

DIRECTIONS

  1. Bring a pot of water to boil. Cook potatoes until tender, but still firm enough that they won’t turn into mashed potatoes. Chill for 3 hrs.

  2. In a small bowl, combine mayonnaise, sour cream, and Ranch. Mix in with cooked potatoes. Chill for 2 hrs.

  3. Once the potatoes are thoroughly chilled, add bacon, scallions, and cheddar cheese. Mix well and serve.
