Bubble and Squeak

INGREDIENTS

4 Tbsp Butter
1 Large Onion, Diced
1/2 lb. Brussels Sprouts, trimmed, cut in half long ways and sliced
2 tsp minced garlic
1/2 lb. Ham, cut in small cubes
1 lb. mashed or boiled potatoes

DIRECTIONS

  1. In a 10 inch skillet melt butter over medium heat. Add onions and cook for 3-4 minute, stirring occasionally.

  2. Add Brussels sprouts and garlic, cook for 10 minutes, stirring occasionally until tender.

  3. Add ham, stir in potatoes, and flatten. Cook for about 3 minutes, turn over, cook for another 2 minutes.

  4. Serve as is or with eggs and bacon. ENJOY!
