Mediterranean Chicken Salad
INGREDIENTS
1lb. Breasts, boneless, skinless
1/2c Red Onion, chopped
2T Red Wine Vinegar
1T Capers
2T Olive Oil
1T Basil or Oregano, fresh, chopped
2T Parsley, fresh
3/4c mixed Deli Olives
Pinch Red Pepper Flakes
Salt and Pepper, to taste
DIRECTIONS
Mix onions with vinegar and set aside.
Bring water with 2T salt to boil. Cook chicken in it for 20-30min.
While chicken is cooking, mix olive oil, capers, olives, red pepper flakes, and basil or oregano. Then add the onions and vinegar.
When chicken is cooked and cooled, dice or shred. Combine with olives and onion mixture and add the fresh parsley.
